What resource would be a good fit for the Kindergarten and 1st grade Literature rec's that would help me in discussing them?
I have heard about Suppose the Wolf were an Octopus for this age range. I also put Drew's suggestions in a word document to keep with me while we're reading.
Also, are there any good coloring books for this age group that would fit with the Classical studies?

OH yeah...
Forgot about those! Do you use anything else to delve into the stories? I was thinking of looking at the LIterature Pockets VP carries for Nursery Rhymes and Fairy Tales.

At this age...
I wouldn't worry about anything beyond basic comprehension of the plot. Can the child narrate the story back to you accurately? That's plenty. :)

Coloring books
I love Bellerophon coloring books. Some may be a little advanced for for K and 1st depending on fine motor skills, but I think they are so beautiful and I use them with my 4 yo anyway.
